Is there a correct way to set the pinion/spur mesh on a tc3....?

Put a piece of paper between the two gears, then push the pinion against the spur, tighten, pull the paper out. If you need it even looser, fold the paper in half, then put it between the pinion and spur.

Because the spur gear on the TC3 isn't exactly symetrical, once you have set the gap at one point, move the spur around slightly and test at each point around the circumference that there is some free movement of the spur against the pinion.
If the gap is too big (i.e. too much free movement) you run the risk of stripping the spur, and if it's too tight (i.e. no free gap) you are likely to over stress the motor.
Personally I adjust the gap by hand / feel - starting from it being tight, then backing off slightly making sure there is always a bit of play between the spur and pinion all the way around the spur.

I've noticed the spur gear on the TC3 isn't exactly symetrical but why is this?

I can only put it down to design tolerances - I'm sure it's not deliberate ???
I've seen guy's change to supposedly more circular spur's, but I have yet to see it impact on performance.

It's probably too expensive without any benefit.
