I'm a (touring car) newbie running a Mission carbon indoor on carpet. Tyres are Sorex 24s with no additive. On my first couple of corners I have no steering, almost like the link has come off, then things settle down and all is well. Any thoughts ? :D

That is purely down to the tyres. There are 2 options, adative will halp a little, tyre warmers will also.
When they settle down it is due to the tyres heating up. I use Sorex 20's and have the same problem, all slicks have the same issue on carpet.

Tyre temp id down, either run inserts that allow an airgap, so temp builds up pretty quick, or, use additives (if you are allowed)

People I know do burn-outs before the start.
They hold the cars on the carpet and jam open the throttle for a few seconds, they say it makes a difference. I don't know myself as I do off-road.
